Veal shanks (Kharin)

Black Pepper½ tablespoon
Salt½ tablespoon
Olive Oil4 tablespoons
Vegetable Oil1 tablespoon
Water3–4 liters
Honey3 tablespoons
Chickpeas200 grams
White Beans (Cannellini)100 grams
Rice120 grams
Raisins60 grams

How to prepare this dish:


Place the veal shanks in a large pot. Add the spices, garlic (with its peel), oil, and water (the water should cover the veal shanks). The water should be hot.


Place the pot over low heat until it begins to boil. Once boiling, reduce the heat to very low and simmer.


Place the chickpeas and beans separately in two cloth bundles. Gather the raisins and rice in the second cloth bundle.


Halfway through the cooking time, add the two bundles of chickpeas and beans, then continue cooking over low heat. When the veal shanks are tender, add the raisins, the remaining bag of rice, and the honey. Taste the dish to check if it needs more salt or flavor, then continue cooking and add any missing ingredients.


Continue cooking over low heat for 45 minutes.


When the veal and other ingredients are cooked through and the broth has thickened, carefully arrange the meat pieces on a serving platter, as they will be fully cooked. Pour the strained broth over them and garnish with flavorful chickpeas. Serve with beans and raisin rice. You can adjust the amount of raisins to your liking; some people prefer more. For those who like spicy food, you can add some chili peppers.
